Steps to make Egusi soup:

  1. Assemble your ingredients..
  2. Soak the stock fish in hot water for 20min.
  3. Wash your meats and place in pot and add blended scotch bonnet mixture.
  4. Add the stock fish and coarsely grounded black pepper, ginger and nutmeg.
  5. Add salt.
  6. Beef seasoning.
  7. Seasoning cubes.
  8. Slice onions.
  9. Add water enough to cover the meat. I add 2 cups because i want my meat to be soft especially because it has cow skin (ganda).
  10. Ground your crashfish and mix with the egusi.
  11. Mix till combined.
  12. Add your palm oil to the egusi. Mix and set aside till your meat is soft.
  13. Now scoop the mixture into the your meat as shown in the picture.
  14. Cook till oil appears on the surface. Adjust seasoning to taste.
  15. Now add your ugwu leaves. I washed it with salt and drain before adding.
  16. Tadaa! It's ready. Typically igbo style. You should try it really..
  17. I served mine with semovita meal.

  19. Note: these egusi soup is healthier because the oil is cooked and not fried.
