  1. Firstly wash the tomatoes, pepper, scotch bonnets and onions, then blend.
  2. Wash and cut the ugu leaves.
  3. In a pot add palm oil and pour the blended veggies, and fry, in another pot wash and put the beef with seasonings and boil till tender, then pour in the other pot.
  4. Add water, seasonings and spices, grind the egusi and cray fish.
  5. Let the soup boil till it reduces, then pour the ugu leaves,and dry fish, in a bowl put your grinded egusi and put a little amount of water and mix well, then put on top of the ugu leaves without turning and close.
  6. After some minutes your egusi soup will be ready, serve with any swallow of ur choice, I served mine with pounded yam..
